Ingredients

  • 2 or 3 plum tomatoes
  • 1/2 large yellow onion
  • handful fresh cilantro
  • handful fresh parsley
  • 1/2 cup vinaigrette dressing
  • 1 pound ground turkey
  • 1 teaspoon cumin
  • 1 clove garlic
  • 1 cup grated Parmesan cheese

Instructions

  1. Mix chopped tomatoes, yellow onion, cilantro, parsley, and vinaigrette dressing together and let marinate overnight.
  2. Brown the ground turkey in a skillet and drain off excess fat.
  3. Add cumin and minced garlic to the cooked turkey and stir well.
  4. Stir in grated Parmesan cheese just before serving, whether hot or cold.
  5. Cut each pita pocket in half and fill with an equal amount of the turkey mixture.
