Savory turkey quesadillas filled with smoky turkey, melted Monterey Jack cheese, and topped with fresh tomatoes and scallions, perfect for a quick, flavorful meal.

Ingredients

  • 1 lb shaved smoked turkey
  • 1 onion
  • 3/4 cup barbecue sauce
  • 6 to 8 flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • chopped tomatoes
  • chopped scallions
  • sour cream

Instructions

  1. Heat chopped onion in barbecue sauce over low heat until onion is soft.
  2. Add shaved smoked turkey and cook in sauce for 10 minutes.
  3. Spread the turkey mixture over a flour tortilla.
  4. Cover with shredded Monterey Jack cheese and place another tortilla on top.
  5. Bake on a cookie sheet at 350°F until the tortilla becomes slightly crisp, approximately 10 minutes.
  6. Serve with chopped tomatoes, chopped scallions, and a dollop of sour cream.
