Ingredients

  • 2 lb. can refried beans
  • 1/2 lb. ground turkey, cooked
  • 3 Tbsp. liquid Butter Buds
  • 1 large onion, diced
  • 3 c. nonfat Mozzarella cheese
  • 1 c. nonfat Cheddar
  • 1 (16 oz.) jar taco sauce
  • 4 oz. can chopped green chilies
  • 1 c. low-fat sour cream or low-fat cottage cheese mixed with lemon juice and nonfat yogurt

Instructions

  1. Brown diced onion in liquid Butter Buds.
  2. Add cooked ground turkey to the onion and cook until heated through.
  3. Stir in refried beans into the turkey and onion mixture.
  4. Spread the bean and turkey mixture into a 9 x 13-inch casserole dish sprayed with cooking spray.
  5. Sprinkle chopped green chilies evenly on top of the bean-turkey mixture.
  6. Spread half of the nonfat mozzarella cheese over the chilies.
  7. Pour taco sauce evenly over the cheese layer.
  8. Sprinkle remaining mozzarella cheese on top.
  9. Bake at 400°F for 20 to 25 minutes until bubbly and golden.
  10. Cool slightly and spoon low-fat sour cream or cottage mixture on top.
  11. Serve with homemade low-fat chips.
