Ingredients

  • 3 cups cooked and cubed turkey
  • 2 cans cream of mushroom soup
  • 4 hard-cooked eggs diced
  • 2 cups chopped celery
  • 2/3 cup uncooked Minute rice
  • 2 tablespoons lemon juice
  • 2 tablespoons onion juice
  • 1 cup mayonnaise
  • 1/2 teaspoon salt
  • dash of cayenne pepper
  • 4 cups crushed potato chips

Instructions

  1. Combine all ingredients except potato chips in a large mixing bowl.
  2. Mix lightly to combine all ingredients thoroughly.
  3. Add 2 cups of crushed potato chips to the mixture and stir gently.
  4. Transfer the mixture to a greased baking dish.
  5. Top with the remaining crushed potato chips.
  6. Bake in a preheated oven at 375°F for 30 to 35 minutes until bubbly and golden.
  7. Serve hot.
