Ingredients

  • 4 cups diced, peeled turnips
  • 3 Tbsp oleo
  • 1/2 cup chopped onion
  • 1/2 cup shredded carrot
  • 1 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Bring 1 inch of water to a boil in a saucepan.
  2. Add diced, peeled turnips; cook until tender, about 20 minutes.
  3. Drain the turnips.
  4. Sauté chopped onion and shredded carrot in oleo until tender.
  5. Stir in the cooked turnips, salt, pepper, and parsley.
  6. Cook, turning frequently, until well heated, 5 to 10 minutes.
