Ingredients

  • 10 to 12 lb. turkey
  • 1 Tbsp. oil
  • 1 tsp. lemon pepper
  • 2 tsp. salt
  • 1 medium onion
  • parsley stems
  • 1 tsp. rosemary
  • 1 carrot, sliced
  • 1 stalk celery, sliced
  • 1 large onion, sliced
  • 1 tsp. rosemary

Instructions

  1. Line a baking pan with foil and spray with Pam or grease with oil.
  2. Sprinkle salt and lemon pepper inside the turkey cavity and under the neck skin.
  3. Place onion slices under the neck skin, fold the wings under the back, and pull the neck skin under the wings.
  4. Add a handful of parsley stems and 1 teaspoon of rosemary into the cavity.
  5. Tie the legs together loosely.
  6. Arrange the remaining ingredients—giblets, carrot slices, celery slices, large onion slices, and an additional teaspoon of rosemary—around the turkey in the pan.
  7. Heat consommé and tomato juice, then pour it around the turkey in the pan.
  8. Cover the turkey with a single sheet of foil, ensuring the foil does not touch the turkey top.
  9. Bake at 425°F (220°C) on the lowest rack for 1 hour.
  10. After 1 hour, slit the top of the foil and open it, then push it to the side.
  11. Continue baking for 1 more hour uncovered at 400°F (200°C).
