Ingredients

  • 4 to 5 zucchini
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1 1/2 teaspoons cream of tartar
  • 2 tablespoons flour or cornstarch
  • Pinch of salt

Instructions

  1. Peel and seed the zucchini.
  2. Cut the zucchini into lengthwise strips and slice like you would an apple.
  3. Cover with water and boil for two minutes. Drain and set aside to cool.
  4. Mix sugar, brown sugar, cinnamon, nutmeg, allspice, cream of tartar, flour or cornstarch, and a pinch of salt together.
  5. Gently stir the mixture through the cooled zucchini slices.
  6. Pour the zucchini mixture into a 9-inch unbaked pie crust and cover with the top crust.
  7. Bake at 400°F for 10 minutes.
  8. Lower the temperature to 350°F and bake for an additional 20 minutes or until golden brown.
