Uncooked Peach Pie

- Bake the pie crust shell and let it cool.
- Combine the cream cheese and 1/4 cup of sugar, then cream well and spread into the cooled crust.
- Arrange sliced peaches on top of the cream cheese layer.
- In a saucepan, combine boiling water and the remaining 1/2 cup of sugar.
- Add cornstarch to the mixture and cook until thickened.
- Add a few drops of yellow food coloring to the thickened mixture.
- Pour the cornstarch glaze over the peaches.
- Top with Cool Whip before serving.
