Ingredients

  • 1 pie crust
  • 1 (4 oz) cream cheese
  • 3/4 cup sugar
  • 1/2 cup boiling water
  • 3 tablespoons cornstarch
  • 1 carton Cool Whip

Instructions

  1. Bake the pie crust shell and let it cool.
  2. Combine the cream cheese and 1/4 cup of sugar, then cream well and spread into the cooled crust.
  3. Arrange sliced peaches on top of the cream cheese layer.
  4. In a saucepan, combine boiling water and the remaining 1/2 cup of sugar.
  5. Add cornstarch to the mixture and cook until thickened.
  6. Add a few drops of yellow food coloring to the thickened mixture.
  7. Pour the cornstarch glaze over the peaches.
  8. Top with Cool Whip before serving.
