Instructions
- Line two 8 or 9-inch pans or one 9 x 13-inch pan with foil and grease.
- Melt shortening in pan.
- Divide brown sugar between 2 pans.
- Add cherries and pineapple.
- Beat together egg yolks, boiling water and 1/2 cup sugar.
- Mix flour, 1 cup sugar and baking powder into egg yolk mixture.
- Fold in beaten egg whites.
- Bake at 325° for 1 hour or longer.
- Test with cake tester.
- Turn out immediately.
