Ingredients

  • 2 Tbsp. shortening
  • 3/4 c. brown sugar
  • maraschino cherries
  • 1 can crushed or sliced pineapple, drained
  • 3 egg yolks
  • 1/2 c. boiling water
  • 1/2 c. sugar
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1 tsp. baking powder

Instructions

  1. Line two 8 or 9-inch pans or one 9 x 13-inch pan with foil and grease.
  2. Melt shortening in pan.
  3. Divide brown sugar between 2 pans.
  4. Add cherries and pineapple.
  5. Beat together egg yolks, boiling water and 1/2 cup sugar.
  6. Mix flour, 1 cup sugar and baking powder into egg yolk mixture.
  7. Fold in beaten egg whites.
  8. Bake at 325° for 1 hour or longer.
  9. Test with cake tester.
  10. Turn out immediately.
