Ingredients

  • 20 oz refrigerated mashed potatoes
  • 1 pound lean ground beef
  • 1 tablespoon butter
  • 1 cup chopped onions
  • 1/3 cup reduced fat sour cream
  • 1/3 cup ketchup
  • 1 teaspoon dill weed
  • 1/2 cup fresh parsley leaves

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Spray a 1 1/2 quart ceramic or glass baking dish or deep dish pie plate.
  3. Press cold mashed potatoes onto the bottom and up the sides of the casserole dish to form a crust.
  4. Bake the potato crust for 20 minutes or until the edges are golden.
  5. Meanwhile, brown the ground beef in a skillet. Drain excess fat.
  6. Melt butter in the same pan used for the beef.
  7. Add chopped onions and cook for 6 to 7 minutes until softened.
  8. Return the cooked beef to the skillet, reducing the heat.
  9. Stir in ketchup and dill weed.
  10. Reduce heat to low, then stir in chopped parsley and sour cream.
  11. Spoon the ground beef mixture into the baked mashed potato crust.
  12. Garnish with sprigs of dill weed before serving.
