Ingredients

  • 1 to 1 1/2 lb. lean pork
  • 1 small onion
  • 1 large can V-8 juice
  • 1 (16 or 20 oz.) bag of frozen mixed vegetables

Instructions

  1. Brown the lean pork and small onion in a skillet; drain excess grease.
  2. Combine the browned meat and onion with V-8 juice and frozen mixed vegetables in a pot.
  3. Add partially cooked diced potatoes if desired.
  4. Simmer until the soup reaches the desired thickness and flavors meld.
  5. Divide and serve hot, or freeze portions for later use.
