Ingredients

  • 4 oz slivered almonds
  • 1/4 cup margarine, melted
  • 1 cup Rice Krispies, crushed
  • 1/2 cup light brown sugar
  • 1/2 cup flaked coconut
  • 1/8 teaspoon salt
  • 1/2 gallon peppermint ice cream, softened

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toast slivered almonds in melted margarine until golden brown.
  3. Remove half of the almonds from the margarine and set aside.
  4. Combine crushed Rice Krispies, light brown sugar, flaked coconut, and salt with the remaining almonds and margarine in a bowl.
  5. Pat the mixture into a 9 x 13-inch pan to form the crust.
  6. Bake at 375°F (190°C) for 5 minutes.
  7. Allow the crust to cool completely.
  8. Spread softened peppermint ice cream evenly over the cooled crust.
  9. Sprinkle the remaining toasted almonds over the top of the ice cream.
  10. Place the pan in the freezer until ready to serve.
