Ingredients

  • 4 c. 2% low-fat milk
  • 1 egg, well beaten
  • 1 small box Jell-O vanilla pudding
  • 1 c. Minute brand instant rice
  • 1/4 c. raisins
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg

Instructions

  1. Gradually stir milk and egg into dry pudding mix in a saucepan, add rice and raisins.
  2. Stir over medium heat until the mixture comes to a boil.
  3. Remove from heat, cover for 5 minutes, then cool for 5 minutes, stirring twice.
  4. Pour into dessert dishes or a serving bowl. Cover with plastic wrap and refrigerate for about 1 hour.
  5. Serve with sprinkled cinnamon and nutmeg.
