Ingredients

  • 1 1/2 lb ground beef
  • 1 medium onion
  • 1 can Ro-Tel tomatoes
  • 1 can cream of mushroom soup
  • 1 can pinto beans
  • 8 oz Velveeta cheese
  • 1 bag tortilla chips

Instructions

  1. In a saucepan, melt Velveeta cheese along with Ro-Tel tomatoes.
  2. Brown ground beef with chopped onion; drain excess fat.
  3. Add the cheese mixture, pinto beans, and cream of mushroom soup to the beef; stir well.
  4. In a baking dish, cover the bottom with tortilla chips.
  5. Pour the beef and cheese mixture over the chips.
  6. Bake at 350°F (175°C) for 15 minutes.
  7. Top with sour cream, grated cheese, lettuce, black olives, and green onions if desired.
