Ingredients

  • 10 oz. veal scallopini
  • 1 oz. butter
  • salt
  • pepper
  • 2 oz. minced mushrooms
  • 2 oz. minced onion
  • 1/2 oz. cognac
  • 2 oz. sherry

Instructions

  1. Pound the veal scallopini slightly to tenderize.
  2. Season the veal with salt and pepper.
  3. Lightly flour the veal.
  4. Melt the butter in a skillet over medium heat.
  5. Brown the veal in the melted butter.
  6. Add minced mushrooms and onions; simmer for 3 minutes.
  7. Add cognac and flame to burn off the alcohol.
  8. Pour in sherry and simmer for 2 minutes.
  9. Add the light cream sauce and blend well.
