Ingredients

  • 1 1/2 cups lentils, washed
  • 1 quart water
  • 2 1/2 teaspoons salt
  • 3/4 cup chopped onion
  • 2/3 cup chopped green pepper
  • 1/3 cup butter or margarine
  • 1/2 cup chopped pimentos
  • 1 (1 lb. 14 oz.) can tomatoes
  • 1/4 teaspoon pepper

Instructions

  1. Combine lentils, water, and salt in a large saucepan.
  2. Cook, covered, over medium heat for 30 minutes.
  3. Cook onion and green pepper until tender.
  4. Combine all ingredients including cooked lentils, vegetables, tomatoes, butter or margarine, pimentos, and pepper.
  5. Simmer, covered, for 30 minutes.
