Ingredients

  • 1 head cauliflower
  • 1 bunch carrots
  • 1 bunch celery
  • 1 cabbage
  • 2 Tbsp pickling salt
  • 2 c sugar
  • 3 c water
  • 6 c Heinz white vinegar
  • 2 cloves garlic
  • 4 red peppers

Instructions

  1. Cut the cauliflower, carrots, celery, and cabbage into bite-sized pieces.
  2. Pack the cut vegetables into a gallon jar.
  3. Combine 2 tablespoons of pickling salt, 2 cups of sugar, 3 cups of water, and 6 cups of Heinz white vinegar in a saucepan.
  4. Bring the mixture to a boil, stirring until the sugar and salt dissolve.
  5. Pour the hot pickling solution over the vegetables in the jar, ensuring they are completely submerged.
  6. Add the garlic cloves and red peppers to the jar.
  7. Seal the jar and let it sit at room temperature for at least 24 hours before refrigerating.
