Ingredients

  • 2 medium onions, sliced and separated into rings
  • 2 cloves garlic, minced
  • 1 medium to large zucchini, peeled and cut into 1-inch cubes
  • 2 small summer squash, peeled and cut into 1-inch cubes
  • 2 green peppers, cut into strips
  • 2 large tomatoes, cut into 1-inch pieces
  • 1 tsp. salt
  • 1 tsp. basil
  • pepper to taste
  • Parmesan cheese, grated

Instructions

  1. In a large skillet, cook onions and garlic over medium heat until soft.
  2. Stir in zucchini, summer squash, and green peppers. Cook for about 20 minutes.
  3. Add tomatoes, salt, basil, and pepper. Cook for about 10 minutes more.
  4. About 1 minute before done, sprinkle liberally with grated Parmesan cheese and mix in.
