Vegetable Provencale
A vibrant and hearty vegetable dish featuring zucchini, summer squash, peppers, and tomatoes, topped with Parmesan cheese. Perfect for vegetarian meals and summer gatherings.
Ingredients
- 2 medium onions, sliced and separated into rings ⓘ
- 2 cloves garlic, minced ⓘ
- 1 medium to large zucchini, peeled and cut into 1-inch cubes ⓘ
- 2 small summer squash, peeled and cut into 1-inch cubes ⓘ
- 2 green peppers, cut into strips ⓘ
- 2 large tomatoes, cut into 1-inch pieces ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. basil ⓘ
- pepper to taste ⓘ
- Parmesan cheese, grated ⓘ
Instructions
- In a large skillet, cook onions and garlic over medium heat until soft.
- Stir in zucchini, summer squash, and green peppers. Cook for about 20 minutes.
- Add tomatoes, salt, basil, and pepper. Cook for about 10 minutes more.
- About 1 minute before done, sprinkle liberally with grated Parmesan cheese and mix in.
