  • 1 large green pepper, coarsely chopped
  • 2 Tbsp. snipped fresh oregano or 1 tsp. dried oregano, crushed
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a 4 or 5-quart Dutch oven, cook onions and garlic in hot olive oil or cooking oil for 3 to 4 minutes, or until onions are tender but not brown.
  2. Stir in eggplant, zucchini, tomatoes, summer squash, green pepper, oregano, salt, and pepper. Cover and cook for about 20 minutes, until vegetables are tender.
  3. Uncover and cook for 5 to 10 minutes more, or until liquid is slightly reduced.
  4. Remove from heat.
  5. Allow to cool slightly.
  6. If desired, stir in mozzarella cheese.
