Vegetable Rice Ring

Ingredients

  • 2 cups cooked rice
  • 1/2 cup Italian salad dressing
  • 1/2 cup mayonnaise or salad dressing
  • 1/2 cup sliced radishes
  • 1 medium cucumber, seeded and chopped
  • 2 small tomatoes, peeled, seeded and chopped
  • 1 medium green pepper, chopped
  • 1/2 cup chopped celery
  • 1/4 cup chopped green onion
  • leaf lettuce
  • 1 pint cherry tomatoes

Instructions

  1. Combine cooked rice and Italian salad dressing; cover and chill several hours or overnight.
  2. Add mayonnaise to the undrained rice mixture and stir until combined.
  3. Fold in radishes, cucumber, chopped tomato, green pepper, celery, and green onion.
  4. Press the mixture into a 5 1/2 cup ring mold.
  5. Cover and refrigerate for at least 2 to 3 hours before serving.
