Vegetable Rice Ring
A colorful vegetable rice ring with fresh flavors, perfect for potlucks or light lunches, combining crunchy vegetables, creamy dressing, and a visually appealing presentation.
Ingredients
- 2 cups cooked rice ⓘ
- 1/2 cup Italian salad dressing ⓘ
- 1/2 cup mayonnaise or salad dressing ⓘ
- 1/2 cup sliced radishes ⓘ
- 1 medium cucumber, seeded and chopped ⓘ
- 2 small tomatoes, peeled, seeded and chopped ⓘ
- 1 medium green pepper, chopped ⓘ
- 1/2 cup chopped celery ⓘ
- 1/4 cup chopped green onion ⓘ

- 1 pint cherry tomatoes ⓘ
Instructions
- Combine cooked rice and Italian salad dressing; cover and chill several hours or overnight.
- Add mayonnaise to the undrained rice mixture and stir until combined.
- Fold in radishes, cucumber, chopped tomato, green pepper, celery, and green onion.
- Press the mixture into a 5 1/2 cup ring mold.
- Cover and refrigerate for at least 2 to 3 hours before serving.
