A refreshing vegetable spread with crisp cucumbers, carrots, and celery, infused with lemon and mayonnaise, perfect for elegant sandwiches and light lunches.

Ingredients

  • 2 grated cucumbers
  • 2 grated carrots
  • 1 cup diced celery
  • 1 small onion grated
  • 1/2 green pepper chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 cup mayonnaise
  • 1 package gelatin

Instructions

  1. Dissolve gelatin in 1/4 cup cold water, then set in hot water to dissolve completely.
  2. Mix the dissolved gelatin with mayonnaise, grated cucumbers, grated carrots, diced celery, grated onion, chopped green pepper, and salt.
  3. Add lemon juice and stir until well combined.
  4. Use as a spread for sandwiches on white or brown bread.
