  • 1/4 cup cold water
  • 1/4 cup boiling water
  • 2 cups mayonnaise
  • 1 teaspoon salt

Tips & Substitutions

For a creamier texture, consider adding a bit of cream cheese to the mayonnaise mixture. If you prefer a vegan option, use a plant-based mayonnaise. Ensure the vegetables are thoroughly dried to prevent excess moisture, which can affect the dip's consistency. Adjust the salt according to your taste, and feel free to incorporate herbs like dill or parsley for added flavor.

Serving Suggestions

This vegetable spread is perfect for gatherings and pairs beautifully with crackers, pita chips, or fresh vegetables like carrots and bell peppers. Serve it alongside a light salad, such as Sesame Spinach Salad, for a refreshing appetizer. It can also be used as a sandwich spread or a dip for party platters, adding a vibrant touch to any meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The dip may thicken as it chills, so stir well before serving. Avoid freezing, as the texture will change once thawed. For best results, consume it fresh, but it can be enjoyed cold or at room temperature.
