Ingredients

  • 2 (10 oz.) packages mixed vegetables
  • 1 (10 oz.) package broccoli
  • 1 (10 oz.) package cauliflower
  • 1 cup mayonnaise
  • 1/2 cup shredded Velveeta cheese
  • 1 can cream of chicken soup
  • 1 can sliced water chestnuts
  • 1 tablespoon minced onion

Instructions

  1. Bring the mixed vegetables, broccoli, and cauliflower to a boil in salted water.
  2. Cook for 10 minutes, then drain well.
  3. In a large mixing bowl, combine mayonnaise, shredded Velveeta cheese, cream of chicken soup, sliced water chestnuts, minced onion, and milk.
  4. Add the drained vegetables to the mixture and stir until well combined.
  5. Pour the mixture into a large casserole dish.
  6. Top with buttered cheese Ritz crackers.
  7. Bake in a preheated 350°F oven for 30 minutes or until hot and bubbly.
