Ingredients

  • 2 small zucchini
  • 2 small yellow squash
  • 1 small red pepper
  • 1 small green pepper
  • 2 cans mushroom stems and pieces
  • salt
  • pepper
  • garlic powder

Instructions

  1. Cut zucchini and yellow squash into small chunks, about 1/2-inch.
  2. Dice red pepper and green pepper.
  3. Drain mushrooms.
  4. Mix all vegetables together in olive oil, seasoning with salt, pepper, and garlic powder to taste.
  5. Place the veggie mixture in a baking dish and bake for about 45 minutes at 350°F until vegetables are tender.
  6. Cool for 5 minutes before serving, then sprinkle with Parmesan cheese.
