Ingredients
- 1 large eggplant ⓘ
- 2 Tbsp. olive oil ⓘ
- 1 c. onion, peeled and finely chopped
- 1 c. green pepper, finely chopped ⓘ
- 2 cloves garlic, minced ⓘ
- 2 c. Italian plum tomatoes, finely chopped ⓘ
- 4 Tbsp. red wine vinegar ⓘ
- 1 Tbsp. fresh basil, finely chopped ⓘ
- 1/4 tsp. cayenne pepper ⓘ
- 1/8 tsp. Tabasco ⓘ
- 1 1/2 Tbsp. capers, drained ⓘ

Instructions
- Preheat oven to 350°F (175°C).
- Cut the eggplant in half and place it on an oiled baking sheet, cut side down.
- Bake for 30 to 40 minutes, or until soft.
- Let cool before handling.
