Ingredients

  • 2 or 3 bags frozen vegetables (such as broccoli, cauliflower, carrots, water chestnuts)
  • 2 packets dry chicken bouillon
  • Sliced Velveeta cheese
  • 1.5 to 2 sticks butter
  • 3 packets Ritz crackers

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Thaw 2 or 3 bags of frozen vegetables such as broccoli, cauliflower, whole carrots, and water chestnuts.
  3. In a large mixing bowl, combine the thawed vegetables with the dry chicken bouillon packets and sliced Velveeta cheese.
  4. Add 1 1/2 to 2 sticks of butter to the mixture and stir until well blended.
  5. Crush the 3 individual packets of Ritz crackers and sprinkle evenly over the vegetable mixture.
  6. Transfer the mixture into a greased baking dish.
  7. Bake uncovered for approximately 30 minutes, or until bubbly and golden on top.
