Ingredients

  • 1 cup salsa (roasted bell pepper flavor)
  • 1 cup drained canned black beans, rinsed
  • 1 zucchini, shredded
  • 8 (6-inch) fat-free flour tortillas
  • 3/4 cup shredded Monterey Jack cheese (jalapeno-style for extra kick)

Instructions

  1. In a medium bowl, combine salsa, black beans, and shredded zucchini.
  2. Spread one-quarter of the mixture over each of four tortillas.
  3. Top each with 3 tablespoons of shredded Monterey Jack cheese.
  4. Cover each with another tortilla to form a quesadilla.
  5. Cook the assembled quesadillas on a skillet over medium heat until the cheese melts and the tortillas are golden brown, about 2-3 minutes per side.
