Ingredients

  • 1 lb. bag mixed vegetables
  • 1 can cheese soup
  • 1/4 cup chopped onion
  • 1 cup cooked rice
  • 1/2 can milk
  • salt
  • pepper
  • 12 oz. bag shredded cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine mixed vegetables, cheese soup, chopped onion, cooked rice, milk, salt, pepper, and half of the shredded cheese.
  3. Mix well until all ingredients are evenly incorporated.
  4. Transfer the mixture into a greased casserole dish.
  5. Sprinkle the remaining shredded cheese on top.
  6. Bake uncovered at 350°F (175°C) for 30 to 45 minutes, until bubbly and golden on top.
