Veggie Veggie Couscous
Ingredients
- 2 Tablespoons Olive Oil ⓘ
- 2 cloves Garlic, Minced ⓘ
- 1 whole Medium Onion, Diced ⓘ
- 1 whole Red Pepper, Sliced ⓘ
- 2 teaspoons Cumin ⓘ
- 1/2 teaspoons Turmeric ⓘ
- 1 teaspoon Paprika ⓘ
- 18 teaspoons Cayenne Pepper
- 1 whole Zucchini, Cubed ⓘ
- 8 ounces, weight Chickpeas, Drained And Rinsed ⓘ
- 1 can 15 Oz. Diced Tomatoes With Juice ⓘ
- 1/2 cups Raisins ⓘ
- 2 dashes Salt To Taste ⓘ
- 5-18 ounces, weight Box Of Couscous ⓘ
Instructions
- Heat olive oil over medium-high heat in a large skillet.
- Add garlic and onion and saute 2 minutes.
- Add red pepper.
- Sprinkle cumin, turmeric, paprika, and cayenne pepper in, mix and cook 2 minutes, stirring often.
- Stir in zucchini, chickpeas, tomatoes, raisins.
- Cover pan and lower heat to medium.
- Stir occasionally until zucchini is tender, about 10 minutes.
- Add salt to taste.
- Juice should be thick, if not, boil until thick.
- While it is simmering, prepare couscous according to the box directions.
- Mound the veggie mixture on couscous to serve.
- Enjoy the deliciousness!
