Ingredients

  • 8 oz. can almond paste
  • 3 sticks butter
  • 1 cup granulated sugar
  • 4 eggs
  • 1 tsp. almond extract
  • 2 cups all-purpose flour
  • 1/4 tsp. salt
  • 8 drops red food color
  • 10 drops green food color
  • 12 oz. jar apricot preserves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Coat three 13 x 9 x 2-inch pans with nonstick cooking spray.
  3. Line pans with wax paper, allowing paper to hang over the short ends; spray the paper.
  4. Break up almond paste in a large bowl.
  5. Add butter, sugar, egg yolks, and almond extract. Beat with a mixer until fluffy, about 5 minutes.
  6. Beat in flour and salt until well combined.
  7. Beat egg whites until stiff peaks form.
  8. Fold egg whites into the almond mixture until well blended.
  9. Divide the mixture into three equal parts.
  10. Add green food coloring to one part, red food coloring to another, and leave the last part yellow.
  11. Spread each colored portion into a separate prepared pan.
  12. Bake at 350°F (175°C) for 15 minutes or until edges are golden brown.
  13. Immediately remove cakes from pans using waxed paper overhangs.
