- Beat the almond paste, softened butter, granulated sugar, egg yolks, and almond extract until light and fluffy, about 5 minutes.
- Beat in the flour and salt until well combined.
- Beat the egg whites with an electric mixer until stiff peaks form; gently fold into the almond mixture.
- Divide the batter into three equal parts.
- Add green and red food coloring to two of the portions.
- Spread each colored batter in separate greased pans and bake in a 350°F oven until a toothpick inserted comes out clean, about 10 minutes.
- Heat the apricot preserves until warm; spread over the cooled layers.
- Stack the layers, pressing down gently, and cover with plastic wrap.
- Refrigerate overnight before serving.
