Ingredients

  • 12 oz. fresh or frozen spinach
  • 2 eggs
  • 3 Tbsp. olive oil
  • 1 clove garlic
  • 3 Tbsp. Parmesan cheese
  • salt to taste

Instructions

  1. Heat 3 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the spinach and cook until wilted if fresh, or heated through if frozen, about 3-5 minutes.
  4. In a small bowl, beat the eggs until combined.
  5. Pour the eggs over the spinach in the skillet and cook, stirring gently, until eggs are just set, about 2-3 minutes.
  6. Sprinkle with Parmesan cheese and season with salt to taste.
  7. Serve immediately.
