Ingredients

  • 1 cup red wine
  • 1 cup olive oil
  • julienne onions
  • crushed garlic
  • cracked black pepper
  • freshly chopped rosemary
  • 4 venison chops
  • 4 slices country ham

Instructions

  1. Combine wine, olive oil, julienne onions, crushed garlic, black pepper, and chopped rosemary in a large shallow dish, mixing well.
  2. Add venison chops to the marinade. Marinate in refrigerator for 3 to 12 hours, turning occasionally. Drain and discard the marinade.
  3. Heat a large skillet sprayed with nonstick cooking spray over high heat.
  4. Add the marinated venison chops to the skillet.
  5. Sear the chops on both sides; then reduce the heat to medium-low.
  6. Add the slices of country ham to the skillet.
  7. Cook over medium-low heat until the ham is of desired doneness.
  8. Arrange the cooked ham on warmed serving plates.
  9. Top with the cooked venison chops and serve.
