Ingredients

  • 2 c. lukewarm water
  • 2 pkg. RapidRise yeast
  • 1 c. + 2 Tbsp. sugar
  • 5 Tbsp. Wesson oil
  • 3 eggs
  • 1 tsp. salt
  • 1/4 stick margarine

Instructions

  1. Fill a large mixing bowl with hot water from the faucet and let it sit for a minute or two.
  2. Empty the bowl, then add 2 cups lukewarm water to the warm bowl.
  3. Add 2 tablespoons sugar and yeast; mix well.
  4. When dissolved, add 1 cup sugar, Wesson oil, eggs, and salt.
  5. Mix well.
  6. Add the flour one-third at a time and mix after each addition.
  7. This should make a fairly thick dough.
  8. Cover and let rise until double in bulk.
  9. Grease 3 loaf pans.
  10. Dip the batter by spoonfuls evenly into the pans.
  11. Heat the margarine and spread evenly on top of the dough.
  12. Let rise until double in size.
  13. Bake in a 300°F oven for 30 to 45 minutes or until the bread leaves the side of the pans and tests done.
  14. If it browns too fast, cover with foil after the first 15 to 20 minutes.
  15. When done, turn out immediately onto a towel to cool.

Tips & Substitutions

For a richer flavor, consider substituting part of the Wesson oil with melted butter. If you prefer a sweeter bread, you can increase the sugar slightly. Ensure your water is lukewarm, as too hot can kill the yeast. Adding a pinch of cinnamon can also enhance the taste. Always knead until the dough is smooth and elastic for the best texture.

Serving Suggestions

This bread is delightful when served warm with butter or jam. It pairs beautifully with soups or salads, making it a versatile addition to any meal. For a sweet treat, try it with cream cheese or honey. It's also great for sandwiches, especially with fillings like turkey or cheese.

Storage & Reheating

Once cooled, wrap the bread tightly in plastic wrap or aluminum foil to keep it fresh. Store it at room temperature for up to three days. For longer storage, slice and freeze the bread, placing parchment paper between slices for easy access. To reheat, simply toast slices or warm in the oven.

Frequently Asked Questions

Can I use regular yeast instead of RapidRise yeast?

Yes, you can use regular yeast, but the rising times will be longer. Allow the dough to rise until it doubles in size, which may take about an hour. Make sure to activate the yeast in warm water with sugar before mixing it into the dough.

What can I do if my dough isn't rising?

If your dough isn't rising, it may be due to inactive yeast or cool temperatures. Make sure your water is lukewarm and check the expiration date on your yeast. You can also place the dough in a warm, draft-free area to encourage rising, like an oven with the light on.

Is it possible to add ingredients like nuts or dried fruits?

Absolutely! Adding nuts or dried fruits can enhance the flavor and texture of the bread. Fold them in gently after mixing the dough but before the first rise. Just be mindful of the additional moisture, which may require slight adjustments to the liquid ingredients.
