Ingredients

  • 1 lb. chopped spinach, cooked and drained well
  • 1 lb. fresh asparagus
  • 1 cup grated Swiss-style cheese
  • 2 cups milk
  • 5 large eggs
  • 3 Tbsp. melted butter
  • 1/4 tsp. salt
  • 10-inch quiche dough

Instructions

  1. While the spinach is cooking, prepare the asparagus by removing the tough lower parts.
  2. Cut the asparagus into pieces approximately the length from the tip of your thumb to the first knuckle.
  3. Place the cooked and drained spinach and prepared asparagus in the bottom of the pie crust.
  4. Spread the grated Swiss-style cheese evenly over the spinach and asparagus.
  5. In a bowl, mix the milk, eggs, melted butter, and salt together.
  6. Pour the egg mixture over the vegetables and cheese in the pie crust.
  7. Bake at 375°F for approximately 45 minutes or until the top is evenly browned.

Tips & Substitutions

For added flavor, consider sautéing the asparagus in a bit of olive oil or garlic before adding it to the quiche. If Swiss-style cheese isn't available, Gruyère or mozzarella can be good substitutes. For a lighter version, you can use half-and-half instead of milk. Always ensure your spinach is well-drained to avoid a soggy crust.

Serving Suggestions

This quiche is perfect as a brunch dish and pairs beautifully with a fresh side salad or some roasted potatoes. For a delightful meal, serve with a side of Sweet Cinnamon Rice for a touch of sweetness. A light fruit salad can also complement the dish nicely.

Storage & Reheating

Leftover quiche can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm individual slices in the microwave for about 30 seconds or place the whole quiche in a preheated oven at 350°F for 15-20 minutes until heated through.
