Very Berry Chutney

Ingredients

  • grain mustard
  • fresh blackberries
  • chia seeds
  • fresh strawberries
  • coconut oil
  • balsamic vinegar
  • rosemary +
  • perrins
  • strawberry/blackberry
  • red onion
  • honey
  • salt

Instructions

  1. Wash fresh berries under cold running water. Finely slice onion. Heat 2 tablespoons of coconut oil in a pot.
  2. Caramelize onion on medium heat. Add thyme. Stir until soft then add jam.
  3. Gradually add berries in batches allowing it to soften and incorporate.
  4. Add honey/syrup, balsamic vinegar, lea perrins and chia seeds then cover and simmer for 20 minutes
  5. Stir and uncover cranking up the heat to high for 2 minutes. Add salt and pepper to taste while doing this
  6. Leave to cool in sanitized jar before storing in fridge.
