Ingredients

  • 8 oz. cream cheese, softened
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • pinch of salt
  • 2 eggs
  • 1 unbaked 8-inch graham cracker crust
  • 1 cup sour cream

Instructions

  1. Beat the cream cheese until fluffy.
  2. Gradually add sugar, lemon juice, vanilla, and salt, mixing well.
  3. Add eggs one at a time, beating well after each addition.
  4. Pour the filling into the unbaked graham cracker crust.
  5. Bake in a 325°F oven for 25 to 30 minutes, or until set.
  6. Combine the remaining ingredients and spoon over the top of the pie.
  7. Bake for an additional 10 minutes.
  8. Cool the pie and then chill for several hours, usually 5 to 6 hours.
  9. Serve with your favorite fruit.
