Ingredients

  • 1 medium onion
  • 2 Tbsp butter
  • 3/4 c chicken broth
  • salt to taste
  • 6 medium summer squash
  • 1 c light cream or half and half
  • chopped chives

Instructions

  1. Saute the chopped onion in butter until it becomes clear.
  2. Add the chicken broth and chopped summer squash; cook until the squash is tender.
  3. Allow the mixture to cool, then puree until smooth.
  4. Season the soup to taste and stir in the light cream or half and half while the mixture is cold.
  5. Sprinkle chopped chives on top before serving.
  6. Serve hot or cold as desired.
