Ingredients

  • 1 to 2 lb. small red potatoes
  • 1/2 cup chopped onions
  • 4 cooked eggs
  • salt to taste
  • pepper to taste
  • 1/2 cup mayonnaise

Instructions

  1. Cook the red potatoes until tender, then peel and slice.
  2. Add chopped onions and chopped eggs to the potatoes.
  3. Season with salt and pepper to taste.
  4. Mix in mayonnaise until well combined.
  5. Chop the dill pickles and add them to the salad along with 1/4 cup of pickle juice.
  6. Toss everything together gently to combine.
  7. Let the salad stand in the refrigerator for 1 hour before serving.
