Vienna Slices are delightful layered pastries with fruity jam filling and a light meringue topping, perfect for tea time or special gatherings with a sweet, buttery flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 cup apricots or raspberry jam
  • 2/3 cup butter
  • 4 egg yolks
  • 2 tablespoons milk
  • 1 teaspoon lemon flavoring
  • 4 egg whites
  • 4 egg whites, beaten stiffly

Instructions

  1. Sift the dry ingredients: all-purpose flour, baking powder, and salt.
  2. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Mix the egg yolks, milk, and lemon flavoring together and add to the dry mixture, then stir thoroughly.
  4. Press the dough into the bottom and up the sides of a 9 x 12-inch pan, about 1/2 inch thick.
  5. Spread the apricot or raspberry jam evenly over the crust.
  6. Gradually beat sugar into the beaten egg whites until stiff peaks form.
  7. Fold in nuts if desired and pile the meringue mixture lightly on top of the jam layer.
  8. Bake in a preheated 350°F (175°C) oven for 30 minutes until golden.
  9. Allow to cool, then cut into diamond-shaped pieces.
