Vienna Slices are delightful layered pastries with fruity jam filling and a light meringue topping, perfect for tea time or special gatherings with a sweet, buttery flavor.

- Sift the dry ingredients: all-purpose flour, baking powder, and salt.
- Cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Mix the egg yolks, milk, and lemon flavoring together and add to the dry mixture, then stir thoroughly.
- Press the dough into the bottom and up the sides of a 9 x 12-inch pan, about 1/2 inch thick.
- Spread the apricot or raspberry jam evenly over the crust.
- Gradually beat sugar into the beaten egg whites until stiff peaks form.
- Fold in nuts if desired and pile the meringue mixture lightly on top of the jam layer.
- Bake in a preheated 350°F (175°C) oven for 30 minutes until golden.
- Allow to cool, then cut into diamond-shaped pieces.
