Vinaigrette (Basic)

A versatile and tangy vinaigrette with mustard, vinegar, lemon, and oils, perfect for salads, grilled fish, or meats, customizable with add-ins for extra flavor.

Ingredients

  • 1 tsp. Dijon mustard
  • scant 1/2 tsp. salt
  • 5 twists of peppermill
  • 2 Tbsp. red wine vinegar
  • scant tsp. fresh lemon juice
  • 2 Tbsp. vegetable oil
  • 1/4 c. olive oil

Instructions

  1. Put mustard in the bottom of a salad bowl.
  2. Stir the first 5 ingredients, whisking constantly.
  3. Add vegetable oil and olive oil in a very thin stream while whisking.
  4. Use shortly after it is made.
  5. Add whatever you like, such as garlic, anchovies, shallots, sliced mushrooms, chopped capers, etc.
  6. May be used on grilled fish, cold roast beef (add horseradish), or chicken.
