Ingredients

  • 1 Tbsp. olive oil
  • 1/2 tsp. rosemary, crushed
  • 1 (14 1/2 oz.) can Del Monte Italian style stewed tomatoes
  • 12 small black ripe pitted olives
  • 1 green pepper, cut in thin strips
  • 1 large carrot, cut in 3-inch julienne strips
  • 1 medium zucchini, cut in 3-inch julienne strips

Instructions

  1. In a skillet, brown the chicken in olive oil.
  2. Sprinkle with crushed rosemary; add salt and pepper to taste if desired.
  3. Add the stewed tomatoes, olives, green pepper, carrot, and zucchini; bring to a boil.
  4. Cover and cook for 3 minutes over medium heat.
  5. Uncover and cook over medium-high heat for 5 minutes or until thickened.
