Ingredients

  • 2 lb. yellow summer squash, sliced
  • 1/2 c. chopped onion
  • 1 can cream of chicken soup
  • 1 c. sour cream or plain yogurt
  • 1 c. shredded carrots
  • 8 oz. package herb seasoned stuffing
  • 1/2 c. melted margarine

Instructions

  1. Cook squash and onion in boiling salted water for 5 minutes; drain.
  2. Mix cream of chicken soup, sour cream (or yogurt), and shredded carrots in a bowl.
  3. Add cooked squash and onion to the mixture and set aside.
  4. Combine melted margarine with herb-seasoned stuffing mix.
  5. Spread half of the stuffing mixture in the bottom of a 13 x 9-inch glass pan.
  6. Pour the vegetable mixture over the stuffing layer.
  7. Top with the remaining stuffing mixture.
  8. Bake for 30 minutes at 350°F until golden and bubbly.
