Turkey Sopa

Ingredients

  • 1 medium onion, chopped
  • 1 small green pepper, chopped
  • 1 cup celery, chopped
  • 2 tablespoons oil
  • 1 can cream of chicken or mushroom soup
  • 1/2 can (10 oz.) tomatoes and green chilies
  • 1 can (5.3 oz.) evaporated milk
  • 2 cups chopped turkey
  • 1 package soft corn tortillas, cut in quarters
  • 1 1/2 cups grated cheese

Instructions

  1. Saute chopped onion, green pepper, and celery in oil until tender.
  2. Stir in cream of chicken or mushroom soup, tomatoes and green chilies, and evaporated milk. Mix well.
  3. Stir in chopped turkey.
  4. Layer the turkey mixture, quartered tortillas, and grated cheese in a greased casserole dish, starting with the turkey mixture and ending with it.
  5. Top with additional grated cheese.
  6. Bake at 350°F for 30 minutes until bubbly and cheese is melted.
