Ingredients
- 1 medium onion, chopped ⓘ
- 1 small green pepper, chopped ⓘ
- 1 cup celery, chopped ⓘ
- 2 tablespoons oil ⓘ
- 1 can cream of chicken or mushroom soup ⓘ
- 1/2 can (10 oz.) tomatoes and green chilies ⓘ
- 1 can (5.3 oz.) evaporated milk ⓘ
- 2 cups chopped turkey ⓘ
- 1 package soft corn tortillas, cut in quarters ⓘ
- 1 1/2 cups grated cheese ⓘ
Instructions
- Saute chopped onion, green pepper, and celery in oil until tender.
- Stir in cream of chicken or mushroom soup, tomatoes and green chilies, and evaporated milk. Mix well.
- Stir in chopped turkey.
- Layer the turkey mixture, quartered tortillas, and grated cheese in a greased casserole dish, starting with the turkey mixture and ending with it.
- Top with additional grated cheese.
- Bake at 350°F for 30 minutes until bubbly and cheese is melted.
