Ingredients

  • 1 c. raisins
  • 2 Tbsp. water
  • 1/2 tsp. rum flavoring
  • 1 c. graham cracker crumbs
  • 1/2 c. finely chopped walnuts
  • 1/4 c. sugar
  • 1/4 c. margarine or butter
  • 3 (8 oz.) pkg. cream cheese
  • 1 (14 oz.) can Eagle Brand sweetened condensed milk
  • 3 eggs

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a small bowl, combine raisins and water; set aside to soak.
  3. Combine graham cracker crumbs, chopped walnuts, sugar, and melted margarine or butter.
  4. Press this mixture firmly onto the bottom of a 9-inch spring-form pan or a 13 x 9-inch baking pan.
  5. In a large mixer bowl, beat the softened cream cheese until fluffy.
  6. Gradually beat in the sweetened condensed milk until smooth.
  7. Add eggs one at a time, mixing well after each addition.
  8. Drain water from raisins and stir rum flavoring into the batter.
  9. Pour the batter into the prepared crust.
  10. Evenly distribute the soaked raisins on top of the batter.
  11. Bake for 55 to 60 minutes or until the cheesecake is set.
  12. Allow to cool completely.
  13. Top with Walnut Praline Glaze and chill.
  14. Refrigerate before serving.
