Ingredients

  • 8 egg yolks
  • 1 cup sugar
  • 1/2 cup fine bread crumbs
  • pinch of salt
  • 2 cups ground walnuts
  • 1 teaspoon rum
  • 1 teaspoon almond extract
  • 8 egg whites

Instructions

  1. Beat egg yolks with sugar until very light and fluffy.
  2. Add ground walnuts, bread crumbs, salt, rum, and almond extract to the egg yolk mixture and mix well.
  3. Whip the egg whites until very stiff and gently fold into the walnut mixture.
  4. Divide the batter evenly into two greased shallow cake pans.
  5. Bake at 325°F (160°C) for 45 minutes or until the cake leaves the sides of the pan and is cooked through.
