A light and crunchy walnut and Ritz cracker treat topped with Cool Whip, perfect for parties or as a sweet snack with a delightful nutty flavor.

Ingredients

  • 6 egg whites
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 teaspoons baking powder
  • 40 Ritz crackers
  • 2 cups walnuts

Instructions

  1. Beat the egg whites until stiff peaks form.
  2. Gradually add sugar, vanilla, and baking powder to the egg whites, mixing well.
  3. Crush the Ritz crackers into small pieces and fold them into the egg white mixture.
  4. Fold in the walnuts as well.
  5. Pour the mixture into a greased 9 x 13-inch dish and bake at 325°F (160°C) for 30 minutes.
  6. While hot, spread a thin layer of Cool Whip on top.
  7. Allow to cool completely.
  8. Spread a large amount of Cool Whip over the cooled mixture.
  9. Sprinkle 1/2 cup of walnuts on top for garnish.
