Warm Broccoli Salad
A vibrant warm broccoli salad combining crisp broccoli, smoky bacon, crunchy water chestnuts, and tangy pimientos, perfect for casual gatherings and light, flavorful side dishes.
Ingredients
- 1 1/2 lb. fresh broccoli ⓘ
- 4 slices bacon ⓘ
- 1/2 c. sliced green onions ⓘ
- 1/4 c. balsamic vinegar or red wine vinegar ⓘ
- 1 tsp. sugar ⓘ
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 (8 oz.) can sliced water chestnuts, drained
- 1 (2 oz.) jar sliced pimientos, drained ⓘ
- 1 hard-cooked egg, grated or finely chopped ⓘ
Instructions
- Cook broccoli in boiling water to cover for 1 minute.
- Drain immediately and plunge into a bowl of ice water to stop cooking process.
- Drain; pat dry.
- In a large skillet, cook bacon until crisp, then crumble and set aside.
- In a small bowl, whisk together balsamic vinegar, sugar, salt, and pepper.
- In a large bowl, combine cooled broccoli, bacon, green onions, water chestnuts, pimientos, and grated egg.
- Pour the dressing over the salad and toss gently to combine.
- Serve warm or at room temperature.
