A vibrant warm broccoli salad combining crisp broccoli, smoky bacon, crunchy water chestnuts, and tangy pimientos, perfect for casual gatherings and light, flavorful side dishes.

Ingredients

  • 1 1/2 lb. fresh broccoli
  • 4 slices bacon
  • 1/2 c. sliced green onions
  • 1/4 c. balsamic vinegar or red wine vinegar
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 (8 oz.) can sliced water chestnuts, drained
  • 1 (2 oz.) jar sliced pimientos, drained
  • 1 hard-cooked egg, grated or finely chopped

Instructions

  1. Cook broccoli in boiling water to cover for 1 minute.
  2. Drain immediately and plunge into a bowl of ice water to stop cooking process.
  3. Drain; pat dry.
  4. In a large skillet, cook bacon until crisp, then crumble and set aside.
  5. In a small bowl, whisk together balsamic vinegar, sugar, salt, and pepper.
  6. In a large bowl, combine cooled broccoli, bacon, green onions, water chestnuts, pimientos, and grated egg.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve warm or at room temperature.
