Ingredients

  • 1 1/4 lb. potatoes
  • 1/3 cup sliced green onions
  • 4 slices bacon
  • 1/2 cup thinly sliced celery
  • 1/2 cup thin strips green or red bell pepper
  • 1/2 cup cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Put potatoes and green onions into a large bowl.
  2. Cook bacon in a large skillet over medium-low heat until crisp.
  3. Remove bacon to paper towel to drain.
  4. Pour off all but 1 tablespoon of drippings from the skillet.
  5. Add celery and bell pepper to the skillet.
  6. Cook over medium heat about 2 minutes until crisp-tender.
  7. Add cooked vegetables to the potatoes and green onions.
  8. Pour vinegar into the skillet. Add salt and black pepper.
  9. Cook over medium heat until hot.
  10. Pour the hot vinegar mixture over the potato mixture.
  11. Toss to mix well.
  12. Crumble bacon over the top before serving.
