Ingredients

  • 8 qt. cucumber chunks
  • 2 c. pickling lime
  • 6 lb. sugar
  • 6 sticks cinnamon
  • 1 1/2 tsp. whole cloves
  • 8 qt. water
  • 3 pt. vinegar
  • 1 1/2 tsp. mace

Instructions

  1. Day 1: Peel and seed large cucumbers to make 8 quarts. Cut into chunks.
  2. Soak the cucumber chunks in a mixture of 2 cups pickling lime and 8 quarts cool water for 24 hours.
  3. After soaking, rinse the cucumber chunks thoroughly to remove lime residue.
  4. Prepare a syrup by combining sugar, cinnamon sticks, whole cloves, vinegar, and mace in a large pot.
  5. Bring the syrup to a boil and simmer to allow flavors to meld.
  6. Add the drained cucumber chunks into the hot syrup and cook until tender.
  7. Pack the hot pickle into sterilized jars, seal, and process in a boiling water bath if desired.
